I'm sure the YouTube videos will show you how, but cathedral ceilings weren't really designed for crown molding, they look better without, sorta defeats the purpose behind their design.
If you go all the way up you get into compound angles. That can be tough on a novice. If you love the look and must have it pehaps you could install it at 8 or 9 feet from the floor. If it will be seen from above (via loft or stairs) consider a ledge with the moulding below it.
