Maybe it's the crown moulding that is coming away from the ceiling, use an expanding sealant.
Which is moving, the molding or the ceiling? How are you attaching the molding?
It regularly happens during wintertime at our home, the forced heat and lack of moisture contributes to it occuring. Possibly -its not the best caulk was used by my contractor too.
