Hi Laura! Outside or inside? Paint is usually the easiest method, although you can tile one inside, too. I've seen some gorgeous makeovers using marble look tile. An outside chimney can be stuccoed.
Mine was made of sandstone bricks and really quite ugly. So I tiled over it with slate tile and it looks great now.
