Since you most likely won't be able to do anything perfect, contact paper would be a great option on counters and there are peel and stick back splash options that you can remove later.
Anything you apply in a rental must not damage any surface, as it would most likely place you in violation of your lease.
You can change light fixtures and cabinet pulls, so long as you re-install the originals, prior to moving, but it would be prudent to ask your landlord, first.
If your cabinets don't reach the ceiling, place a colorful teapot or similar items there. Add potted herbs to open shelving, if permitted.
If your kitchen has a window, find colorful napkins you can hang on an angle from a thin drapery rod, or install pretty sheer curtains.
Add a colorful soap dispenser, patterned towels or paper towels.
