You lay like ceramic tile. You need to have at least a 3/4" plywood subfloor than a 1/2" screwed and mortered down concrete board. Then you can thin set the floor if level.
There are also other underlayment products that can be used, such as Detra.
It is very important that the thinset you choose is suitable for natural stone and large format tile. You will need a rapid drying polymer modified motar. I've used Versabond LFT for large format granite tiles. It works very well.
