What is the difference between oven and convection ovens?
If a receip calls for 400 degrees for 35 minutes, what would both numbers be in a convection oven? Thanks !

Convections cook faster due to fans at rear of oven. Reduce cook temp by 25 degrees Fahrenheit (additional 25 if cooking in glass dishes). Reduce cook time by 20 minutes, but check for doneness. If cooking in a darker metal pan, reduce heat by 50 degrees.
If you own a convection oven, the manual should include detailed specifics, as yours may be vastly different depending upon make and model.
If you never received the manual from previous home owner, enter manufacturer and serial number of oven on Google search, for the manual.

My KitchenAid oven-convection oven normally caculates the difference, most often it subtracts 25 degrees from the directions as seen with the preheat completion. Appliances may differ you might want a consultation with your appliance manufacturer help line.
