You can remove to studs and drywall, that's what we did. As walls are down, we rewired, replaced all plumbing and gas lines, and insulated. Or, you can patch with plaster.
What are you looking to do? Are they in need of repair?
Go with Kelli's suggestion. That is the way my crew and I did it. Remove the plaster and lathe down to the studs. Put up drywall.
If you don't want to go thru the mess of removing the plaster and lathes and you don't want to upgrade any wiring or piping in the wall, just nail up 1 X 2's to the existing wall at appropriate distances and attach the new dry wall to the 1 X 2's. You will need electrical box extensions to bring out the switch and receptacle boxes to the proper distance or just cut into the old wall, remove and replace. definitely the easier method but you do loose about 2 inches to the room dimensions.
