Wash the quilt. Or I have a rubber brush that works well. Sold at any pet supply. In a pinch, rubber gloves work well too. To keep fur shedding to a minimum, you might try brushing the cat(s) on a regular basis.
I have also used the type of roller that has sticky paper to get off hair on items, and the velcro type clothes brushes work great for my cat.

I would shake it out and then use a lint roller on it. If you don't have one, you can wrap your hand in masking tape with the sticky part on the outside and rub it along your quilt.
