Take your broken pieces draw the shape of your table top you are going to apply the pieces to. Make the draw g the actual size, then just start a "dry" run. Play with the shapes and colors until.you land on the design you like. Take a picture of it, then start applying it to your table. Good luck and have some fun.
Are you using broken pieces of plates? You will need a backer board and then an epoxy or other product that will hold the pieces. I would pour a clear resin to fill in the voids and cover the pieces.
