How tall should board and batten be in an open floor pan?
How tall should board and batten be in a open living room, dining room and foyer with a centered vaulted ceiling? I prefer around 54 inches but that interferes with hanging art then.

It's a personal choice. If it interferes, make it lower. It won't be a problem. The general rule is 1/3 or 2/3 of the height.
48 inches will give you a good height and allow the art. Or you could hang the art on the toprail.

I get that it would interfere with typical artwork but what about creating a narrow picture ledge so you can add framed art above and hang smaller art below in an unexpected location, like visible while sitting? Also, I'd say the height depends on your ceiling height. If you have tall ceilings you could make them much taller than normal.
