Wow that must be a lovely room. Are all the windows identical? If not I would not feel constrained to decorate them all the same way. What is the style of your furnishings? Is this a very large room? Pictures would help. In my house I use a mixture of shutters and curtains and some of the windows also have cloth pull up shades.
If the room is treated as a Great Room with different areas for sitting and dining you could do a mix of treatments with the same materials/textures. Otherwise, I personally would stick to the same treatments on all.
Mary, What a wonderful decision you have to make. Yes, in my new house with a 24 x 24 ft great room, the builder's plan had a single window in addition to the patio door ... so I had to pay for 2 more windows but that's all I have. Obviously you have a beautiful older home which you should appreciate!
