You sure can, just make sure your nails/screws are into the studs!
If the paneling was installed on the studs, you can add another layer. If not, remove the paneling first. Especially with pallet wood, which may have flaws and varying thicknesses, a paneled or dry walled backing is desirable. Best wishes, Jewell
