If your latex paint color is light or white, don't use polyurethane. It will yellow. Use polycrylic instead. It's water-based and easier to use.
Water based poly for light colors. I actually prefer water base.

use water base it won't yellow over time like oil based
Yes, I placed several layers 6-8 of gloss poly on my acrylic latex corn hole set. It looks wonderful years later and has not yellowed.
