Do you want to cover the seams of the sheet rock? this strips of wood (lathe) or decorative trim can be used to cover the seams but note that most new drywall sheets have a "valley" at the edges to make taping and mudding easier. In other words, these "valleys" will still be exposed. Another option is to use wide strips of 1/4" or 1/2" plywood nailed to the drywall seams using long brad nails. The strips can be caulked where they meet the wall and then painted. I hope this helps!

I don’t know why you don’t want to finish the seams with mud and tape. It is very easy to do and the materials and tools are very inexpensive. You can buy pre-mixed mud, tape, and a 6” putty knife. Think about it before you go another way. If you are unfamiliar with doing the job look up a video on YouTube.
