To plant for next year?
Just let them dry for about two weeks in the open air to get rid of moisture. They have a good bit of moisture in them. Store over the winter in a plastic Ziploc or a jar with lots of air space like a peanut butter jar.
If you plan to eat them, I just clean all of the pulp off, rinse, spread on a cookie sheet, cover with salt and let them toast for about 20-25 minutes in a 325 oven until you see them get a bit darker. Cool store in a jar. Makes a good snack. I do all of my squash seeds, pumpkin, hubbard, acorn.
