Peel and stick tile or laminate floor planks.
You can also use something like beadboard. A sheet of beadboard is about $15 where I live. Get it cut to size in the store and install with nails.
Paint, contact paper, bead board, peel & stick tile, self spacing ceramic tile, roof flashing (my sister did this and I love it, look of stainless for a cheap price).
