How can we repair recessed light switches?
How do I, can't afford electrician, fix this. Light switches recessed after the insulation improved against the cold, insulation board added then replaced dry wall moving the wall out several inches. Have to reach into hole in the wall to access switches. I can't put the switch plate on and reach the switches.

I would not fool around with any outlets as an amateur. You would have to turn off electricity at the fuse/box. It seems an inefficient job was done by whoever installed the insulation/drywall. Did you pay for that? The outlets must be extended to the new surface. If the installers of the drywall/insulation will not complete the job, you must hire an electrician. Don't fool around with this
They make spacers or you can use washers to bridge the gap. This is a common issue when adding tile to a wall.
