Coat them in Epoxy resin. Theyโll be protected forever.
The reason your paint is coming off is because it needed a primer BEFORE you paint. Without primer, no amount of topcoat will help

In the end, no matter what you do, it's still paint and it will wear away. The only thing you can do to prolong it is seal them but if they're counter tops, you'll need to find a food safe sealer.
Sand it down to give the area some "bite" then repaint the edges and seal.
Paint can be protected by adding polyurethane over the paint.

Why not use a timber edge stuck on with double sided tape or use a clear tape to cover the painted edge!
