It must be terribly disappointing when a job isn't done well. I did a bit of research and found this article in hunker that might help you fix your problem.

Do you think if you called the installer of the backsplash he would come out and fix the issue? It would be worth a try.

You paid to get a job done to your satisfaction so call the contractor and have that person fix what they did. Remember that vinegar, bleach, ammonia, & most commercial cleaners can be to abrasive & leave etching, clouding, or scratches in the quartz.
This site has quite a bit of information on quartz countertops. Perhaps something here will help.

Talk to the folks that made the countertop. They should best answer to as not to void any warranties. They will tell you the best to care for your countertops too.
Use a washcloth with warm, soapy water. To keep your quartz countertops clean, you usually won't need anything more sophisticated than a gentle soap solution. ...
Wipe down the affected area. ...
Rinse the countertop with fresh water. ...
Clean up spills as soon as they happen.
If this is a new counter top and the contractor damaged it, I would talk to his boss to find out if he could come out to fix his mess. I hope you took pictures for proof.
It breaks my heart every time a question like this pops up. First your backsplash installer was lazy and sloppy. They should always protect any surface before commencing the job. I would call the owner of the installation company and see what they have to say. Follow up in writing, send via certified mail. Then call your countertop contractor and see if they will stop by and see what they suggest. Fingers crossed that everyone cooperates. If the backsplash installer refuses to cooperate, lodge a complaint with the Contrctors State Licensing Board. If you want to take it further, depending upon what the actual amount of damage may be, you can take them to court. I know it sounds harsh, but these guys will never change their ways if everyone keeps looking the other way and not addressing the issue head on. Why should you be out of pocket good hard earned cash for a countertop and backsplash when the job was not performed properly. Going after their license, pocketbook and time in court hurts their reputation and bottom line. If it were me, I would not have paid them until the issue was resolved. Yes, you can do that . . . And for future reference, here is how to hire any contractor you will ever need.

Try very hot water and get the grout off but be careful not to scratch it
When you call your contractor, tell them to call Custom Building Products’ Technical Services Dept. and buy the correct grout remover. They make 3 different products for this, and Tech Services will direct them to the correct product.
