Tuffed pillows? If so, the best way would be to remove the buttons. This will give you the option to cover as regular pillows or add the buttons back for the effect. If they aren't sewn with buttons, you can just remove the stitching.

For anyone who is not familiar with what tufting is, this footstool shows an example of tufted upholstery.
It has shank buttons that are sewn through the inside batting and are attached together with heavy string or wire.

The channels on your chair upholstery have been made by an industrial sewing machine that uses special presser feet to enable the stitches to penetrate through the outer covering and the inside stuffing at the same time. The outer covering may even be fused onto the inside stuffing to help the individual sections keep their form.
As far as recovering this chair back, you could sew a slip cover that goes over the entire back, but unfortunately you will not be able to recreate the same channels with a home sewing machine. It can be done only if the entire cushion is taken off and replaced with a new one built at a professional upholstery shop.

Hello there,
Pin fabric centre back from top to bottom. Work fabric into seams as shown, secure with pins. Use Upholstery needle to sew in place. Move on out and secure fabric at sides with pins and repeat the previous process with the next seam. Trim fabric to suit and sew in place. Cover seams with trim or tape as required. remove all pins and enjoy!
I bought some fabric and made a new cover for mine.
