What can I do with an old brass headboard and footboard ?
These are in pretty rough shape so I can’t use them as I had intended. Any ideas for what I could do with them? It is queen size and the headboard is 56 inches tall in the middle.

"Plant" them in your garden! Tall wildflowers for the "mattress" or climbing vines on the spindles.

Use them in the garden as a trellis
Incorporate them as backs to to a porch swing or garden bench?

They are really pretty. I would clean them and paint them with Rustoleum spray paint. I would get a headboard adapter set from the hardware store and use as planned.
What about using them in an outdoor holiday display on a porch or in a yard?
The shapes would create interesting outlines for mounting garland or strings of lights. As the bars are all quite narrow, either twist ties or zip ties would work well for securing the decorations securely in the wind.
Garden trellis ? gate ?
I believe I would secure the headboard to the wall behind your bed and place you bed in front of it. Then, if you are able or know someone who can, make a bench using the footboard to use elsewhere. These pieces have so much potential and are quite lovely not to use them.
Take the side poles off, then suspend from the ceiling to use as a laundry drying rack. Picture below shows a ladder used for this purpose, but the set up would be the same, hung with chains.
Maybe in the kitchen as a wall holder for pots and pans or attach it to a table and use as a Baker's rack and add a shelf or 2.
