Why paint a butcher block countertop?! People would kill for butcher block. If you do want to paint you would need to use an epoxy countertop paint kit. Regular paint won't hold up. Here are ideas for rejuvenating butcher block. Notice some people made their own butcher block since it is expensive.

Unless the butcher block counter top is in bad condition why would you want to change that?
I'm not sure that painting is the best option.. But obviously that's up to you of course!
You can paint any wood by sanding it down, priming it with a stain blocking primer such as BIN Shellac Based Primer, and then painting whatever paint you would like. If it's going to get a lot or use, I would topcoat it with Varathane Polyurethane.
None of these products are necessarily food safe though.
It's not true Butcher Block, it's like a laminate looking butcher block look and I want something totally different

Are you still going to use it as a countertop? If yes you have sand it well and use oil based paint. You may need 2-3 coats.
The key to painting laminate is preparation. Sand, clean and use an excellent quality primer.
Just cove the countertop using thin layer of oil-based paint with the help of a natural-bristled brush. Avoid using water-based or acrylic paint because. Let the first coat of paint to dry completely.
If you do, check into a food safe kitchen countertop painting kit. It seems with the oils that have been absorbed over time that painting would be a difficult project. After a while the oils would seep to the surface causing issues with the paint I think.
