Hi Sherry you can always check craigs list in your area or Facebook Marketplace. Its a great place to find hardly used things at a fraction of the cost. Your local thrift or salvage depot would also be a good place to look.
I would be VERY hesitant to purchase a hot water heater used though. Some things are worth the warranty that comes with buying them new.
Habitat for Humanity has an outlet store for many of these items. I feel that they can also provide helping hands for an install if you ask.

In my experience, it is never worth any perceived savings to complete a job without proper technique, tools, and adherence to building safety codes.
From what you mentioned as areas that needed replacing in your bathroom, I would budget for a couple of thousand $ anyway. It is better to have funds left over in the end, than to be caught broke with an half unfinished bathroom.
