After you cut the wood and add hinges like it's suggested above, try painting it with chalkboard paint so it can double as a place for the kids to draw.
Is there room for bookcases as a divider? One bookcase facing the boys side and another bookcase facing the girls side? Good idea using chalkboard paint too.
And it’s more important to hide their faces from each other than their feet. I suggest two coats of white gloss or semigloss paint on each side so they can use water-based or permanent markers on both sides. And if you can add short bookcases on both sides, these would help give the plywood more stability, and the kids more storage. No room for bookcases? Screw the plywood into the beds. The divider would be more stable and much harder for the kids to remove. I’d love to see how these turn out, at least on the first or second day you have them finished. This too shall pass, Nancy! ☺️
