What can I do to remove the old house smell from my 100 year old house

here may be urine in the carpeting... get it professionally cleaned.
Open the windows as much as possible. Get a black light to look for urine stains. Have carpet professionally cleaned and animal stains treated. (There is a better name than that.) I had Zerorez clean and treat my carpet after my senior dribbling dog went to the Rainbow Bridge. If you have upholstered furniture have it cleaned, also. I use white vinegar in a small bowl to remove air smells, also. Just leave it out 12 hours.
You have to locate the source and to do that go to Walmart and get a battery operated black light, in the pet section. Urine glows under a black light. So at nighttime, shut off the lights and search out with your black light. Look at walls, carpets, flooring, furniture, etc. When you locate these spots, treat it with an enzyme, Nature's Miracle, available at pet stores. Vinegar and baking soda may or may not work well enough for this.
Fresh air is also good, open the windows and let it in. If there are carpets you may want to steam clean them, if the smell is in the padding, consider replacing it. Change out the air filters, some people have used air purifiers to treat this problem, a final thought would be an odor sealing paint. Best to you.

Baking soda will help remove odors from carpets. Buy it in bulk instead of the small boxes. Sprinkle on liberally, let it sit overnight, and then vacuum. I tried this once at our rental, but picked up the wrong canister. Don't use powdered sugar accidentally.

The febeeze commercial is really true when they mention pet odors are absorbed into soft surfaces (like a couch, chair, carpet, etc.)
I make my own version of febeeze by combining 1/4 cup of fabric softener in a spray bottle and top off with water. This can be sprayed everyday on all fabric surfaces safely but not directly on pets.
I found a spot where the cats had been peeing by the front door. Apparently I wasn't fast enough to open the door and let them out. We had to take the molding off at the floor level. The smell was horrible once the molding came off.
Ended up pouring about 1/4 of petzyme on the area. Still didn't get all the odor out so put 1/2 a box of baking soda down and used a broom to sweep it into the crack. Let that sit for 2 days and when I checked no more smell.
