I like box cutter knives for that purpose too.
depends on the thickness of the cork(bottle stoppers,sheeting???) & how you want to cut them the shape?(straight lines,stoppers in halves,sheets in curved designs??) either a curved linoleum knife,electric knife,thin blade hacksaw,serrated knives just make sure it's sharp and small objects are held with vise or use some anti cut gloves so you don't cut your fingers off while holding & cutting

I would use an Xacto knife for the most control. Make sure you have a very sharp blade so your edges aren't jagged.
