Are there any doors or windows? Are there any focal points in the room? A fireplace or bay window by chance?
I used a long and wide shelf. Put some larger items on it so it stayed in scale. The horizontal breaks up the massive vertical.
WOW! So many options! If you want to separate the dining room from the living room a bit you could put some tall shelves perpendicular to the wall. This would create 2 separate spaces. Then hang pictures or other decorations on each side of the shelves. If you want to minimize the ceiling height visually, you could put a shelf from the fireplace - across the window (just above the window) and hang your pictures and what not under it. If you have children, you could create a gallery wall of their pictures (you can do this with any pictures of course). OR a really BIG clock would look cool. OR a large canvas print with bookshelves on each side and perhaps a buffet or other piece of cool furniture under the canvas. OR if you're really brave, and like southwestern decor, build little, colorful balconies (some pics attached). I hope this gives you some ideas.
