Paint, drywall, ceramic tile, wood....
Frame it out and cover with drywall or wood planks. You can also paint it to match the walls.
If you mean cover the fireplace hole, you can use a number of various screens or decoated metal ones even that are made for just that. If you mean the brick above the ope fireplace, you can cover it will peel and stick back splash, or paint it, or wall paper and thin board it for the wall paper to adhere.
A brick chimney? Such a great focal point! Maybe paint it if that’s your style, but definitely keep it🤗 I’d love to have a brick wall!
