I just deadhead the lilies--cutting off only the dead flower and down a inch or so. The leaves need to remain until the end of the season as they contribute to next years growth. I cut everything down in the late fall once all of the plant starts to yellow.
Yes, you can cut them back, but wait until they turn brown. The strength is going back into the bulb for next years flower.
