How to get something to grow under my Japanese Maple ?

Try a flowering ground cover that is for shade. You could also plant some Hostas. They need to be in the shade and come in a great variety.
i'd use an ajuga .. or other evergreen ground cover ... grass and trees are not friends!

Sky gave you good advice. Ajuga prefers more wet conditions and can grow into your grass. Mint can be extremely invasive and difficult to control, unless grown in pots.
Some Heucheras will grow in shade, as will Impatiens, variegated Lamium and Periwinkle. If the area receives more sun, try plants that will tolerate partial sun.
I have two trees in my front yard with the same issue.... I have hosta and tulips planted under one of them. The tulips come up before the tree gets it leaves in the spring. Then the hosta come up as the spring turns into summer and if full until after it frosts in the fall. The flowerbed is encircled with a plastic border and filled with pea gravel.
The other tree has vinca planted under it. It stays green the majority of the season, but they will produce pretty little purple flowers. Plus it has large decorative rocks throughout the base of the tree intermingled with the vinca.
Maybe some container plants?
