I believe in the Fall would be best; would not want to interfere with new growth. When we had grape vines on the porch supports, we started pruning soon after harvest since they had gotten out of hand! Might be best to check with a nursery, to be certain.
It's best to prune Grape VInes is in the Spring, like in Feb, March, or April. If they're pruned too early, a hard frost in the late winter can damage the canes & buds.
