I would not use any wood untreated for an outdoor project, it won't last more than a year in most cases. That being said, any good deck stain/sealer will protect the wood. I would use a sprayer, but you can just paint it on. I would also cover the entire piece inside and out before you put your soil into it. Good luck!
Type in pallet planters for a ton of ideas. My favorite is the pallet set on its side with the slats running horizontally. The pallet is stabilized by attaching a wider base for it to stand on. This makes it moveable. The middle is filled with dirt up to the first space and plants are inserted from each side. This step is repeated for each space. My girlfriend made one for her strawberry plants and was elated to be able to harvest strawberries without bending over or kneeling in an entire patch.
