If the humidity is that bad, you need to consider a whole house humidifier....rather than just closet doors. Get to the source of the problem.
Otherwise, I'd use louvered doors.
Pounded tin used to be used on pie safes for ventilation. You could build closet doors sort of like the cupboard doors in this picture only with a woodsy design!

We had the same problem in our old house because of not enough sun. We used louvered doors on all our closets and it worked very well. It wasn't always easy with younger kids, but we did try to clean their closets out often so they weren't over-packed! Good luck! Hope this helps!
