That depends how many rooms you want, I would go back to the original size but give the rooms a modern look.
I would take down whatever walls I could that were not load bearing, and have fewer bigger rooms than several small rooms.

Have you ever watched This Old House..... its a laborous process to restore a 100 yo house and they don't call them Money Pits for nothing.
Only you can decide if you want to do the work, and have the funds too finish the job. I've know people who lovingly restored old homes over 10 years, as a labor of love. I would open up rooms that had been chopped up, cause I know how to do it, and I like large rooms.
