You see its a work in progress. Walls are rust and green and pennies. What color would compliment the copper?
There a countertop paint kits, but most people use that to cover old, ugly Formica. It probably would work on granite too. You may want to have granite replaced. Tiles can be used to cover the backsplash and give you a contrast.

Hello, it's so beautiful and strong, why don't you think about painting the walls around it to update colors? It seems a waste to cover or remove it.
That's a lot of granite. You could try and see if a peel and stick tile will hold on the backsplash. If you get a neutral backsplash with just a few decorative tiles for accent, it will draw the eye up and distract you for the countertop.
