there are some fabulous color combo's from the 1950's that I am sure you can update like: red white and black; Pink and Turquoise; yellow and blue; seafoam and peach. Look at Pinterest and in décor magazines for inspirations.
GO INTO GOOGLE and diy kitchen cabinets so many people have so many ideas that should give you a start, sounds like metal cannot be any more 1970's original. Good Luck
Depends on what the metal is, and what it looks like underneath the paint that's on them now. You could just strip all of the paint off and clear coat them (just leave the metal).
What colors do you have in the kitchen now? Maybe paint them and then use vinyl decals. Here's an example of some cafe themed type one: https://www.build.com/roommates-rmk1740scs/s1306493?uid=3107112

Retro colors like the popular reds and turquoise will really make the cabinets rock a 1950's vibe.
Could could cover them with contact paper or wall paper that is removable. Some pattern and color could be fun depending on what is available.
