How can I best utilize a large open lower cabinet space?

You can install a Lazy Susan in the cabinet to make things easier to access!
add the foldable canvas draws for easy access to your stored items
Buy some large square or rectangle baskets or bins that fit into the space. Use them to store vegetables (potatoes, onions, etc) or large cookware that you don't use often, or even misc kitchen supplies. The baskets will keep the area neat and organized. Or....you could add shelves and turn it into a cookbook rack.
