Lots of people have had luck with using vinegar to kill the weeds that pop up. If you haven't yet laid the bricks or pavers you should till the area and remove any roots, then use a really good weed block under the sand base.
If the joints between the pavers are filled with sand or stone dust, weed will take hold with no real way to prevent them. If you fill the joint with polymeric sand, it will prevent weeds, but eventually (over a few years as the sand begins to break down) they will grow. If you mortar the joints, that will prevent weeds, but unless the pavers were mortared into place to begin with, any mortar you add will just crack. As time consuming as it is, I just pull them when I see them popping up. There are organic/natural formulas like vinegar and chemical formulas you can try spraying, I just prefer not to.
You can pour boiling water on them.
Boiling water or plain old white vinegar works like a charm. Even if a weed barrier was used, wind, wildlife and people spread weeds and they lodge into crevices and sprout.

2 cups white vinegar
¼ cup salt

Mix in a spray bottle. If you have a larger area, you can mix in a garden sprayer with larger quantities. Use when it will not be raining for a few hours so that it isn’t washed away.
The best way is to put landscape fabric down before you install pavers/bricks. Then when installed use a broom to sweep polymetric sand into the grooves, wet down and repeat with another coat.
