You'll have to put some sort of barrier down between the pavers like gardening fabric or trash bags then cover with some sort of rock.
You can spray it with vinegar and it will kill the grass. A sunny day will help it work faster.
Should also have put sand down before laying pavers
You don't. Weeds are spread by wind, wildlife and people. Wherever they land, they grow.
Boiling water; Epsom salt followed by boiling water; vinegar all work well, are easy and almost free.
