While I do not own one, have everyone bring in their food processor to speed up the project. Or if a church member has a business or access to restaurant equipment would be even better, if only for the slicing of the rhubarb. Maybe a local restaurant would be willing to process the rhubarb for you? Anyone work for a catering company?
A mandoline or a few mandolines that can adjust to cut 1/2 to 1 inch pieces...not sure if they can go that thick, but I'd check around. Food processors usually have much thinner slicing blades, but worth checking those too. A meat slicer isn't easy for something like rhubarb, but might work if someone has one. If nothing else, have someone bundle stalks and rubber band them in bundles to cut more at a time. Just make that a job while others chop.
I would just get a bigger, longer chopping knife, line up the stalks and go to town.
