What aboout vertical shiplap like this: https://www.frugalfamilytimes.com/2018/05/how-to-make-vertical-shiplap-paneling.html
I would check in at Lowes or Home depot etc. They sell VERY thin veneer plywood that you could have the cut for you and tack on. Then you could paint it or stain it to match.
Home Depot and Lowes sells thin boards that come in sheets that you could add and then paint to whatever color you want
Amazon sells that cupboard and counter heavy duty contact paper and peel and stick wallpaper if you want to go that route. https://www.amazon.com/s?k=heavy+duty+contact+paper+for+countertops&crid=G8HBLLZMB1BG&sprefix=heavy+duty+contact+paper%2Caps%2C330&ref=nb_sb_ss_ts-a-p_2_24
We got a sheet of bead board at lowe's and used it all around our kitchen island. Just painted it the same color as the rest of the island and it blends in and looks great.
I'd use some new contact paper to cover it up.
Thin plywood, wood underlayment, beadboard, contact paper
What about peel and stick wallpaper?
You could use paneling painted to the color of your cabinets. Home Depot has a bead board set, that is inexpensive that would look great on the side of a cabinet
You could get a large piece of cork, frame it and mount it there and use it as an organization center.
