Save a few for sorting or storage as Hillela suggested and the offer the rest to a local preschool for the children to use for a class craft.
I put chalk labels on mine and use them to store various small craft supplies such as beads and buttons.
I use them to store dried herbs
I did a Treasure Planet birthday party for my son when he was younger - made treasure-map invitations from paper bags, rolled them up and popped one in each bottle with a teaspoon of beach sand and a couple small shells, wrote the receiver's name and address on the bottle and took them to the post office to be hand-cancelled and mailed out. The kids all loved them, and it set the stage for the party weeks in advance... The post office will actually mail just about anything, as long as you stipulate hand-cancelling...
