The peel and stick ones are amazing! You can get them very inexpensively on Amazon.
How about tin tiles? Easy to clean too.
Beadboard or plywood shiplap
We found pretend subway tile in blocks that needed to be glued, not cemented in place. We used a small tube of white grout where the blocks met. We cut the blocks when needed with a sturdy carpet knife. It looks really nice and is easy to clean. Best wishes on your backsplash.
We used a section of paneling that looked like brick, cut the size we needed and affixed it with caulking and a frame of molding. Looked and worked great!
