Hi! As long as it's indoors, I don't see a problem at all. I live in northern Missouri and have used real shiplap and faux shiplap many times with no problems at all.
Make sure you buy kiln-dried wood and there will be no problems. Otherwise leave at least 1/8 gap on both sides for expansion and contraction, that can be hidden behind some moulding.
