More hard way - to use spackle to fill the gaps... more easy way - apply flat panels over all that.

Well you could remove from wall. If it leaves tares in sheetrock it's attached to ,they have mud you can buy at home supply store and fill in holes , sand and go for the look you want. Been there and done it. Otherwise paint it for another look.
Lots of people paint wainscoting white but it looks like white wainscoting...if you want a smooth surface you might have to remove it. Too much hastle to fill groves. They make a fabric to go over mut $ and I can still see it underneath.

Paint it! We have an old house and I painted it all very easily.
Thanks for all the responses - unfortunately most seem to contradict each other and I was hoping to not have to remove the paneling because I can tell it would be a mess behind it, which would be even more work.
