If its a fitted sheet , you can use it as a tablecloth on fold out table . Flat sheets can make tents for the children or cut up to make cleaning rags. Or you can donate them to a homeless shelter and they would be eternallygrateful .
Make rags out of them.Or you can make a quilt cover.
Crocheted rugs, patterns are on the internet.

Are they 'pretty'? If so, you could use them to make stuffed toys or dolls clothes. I have used sheets as lining for curtain/blinds and the holding layer when recovering furniture. They could be used as the backing for quilted items (placemats, pot holders), made into bows for garlands, use them for paint drop cloths or rags
best rugs you will ever have you can dye them coffee stain Them Pioneers used them they made rugs out of old clothes etc . Old sheets last almost forever rags don't always work good. Cut stripes about 2 inches or 2-1/2 inches. crochet or braid them. As Polly said patterns on internet.

If you have no immediate use for them except to store until later, donate them to a local animal shelter. They always need sheets, towels and blankets for their cages.
Donate them to Goodwill or a re-settlement facility. Keep them on hand to fill an as yet, unanticipated need. Don't worry about using them right now, clean folded sheets don't take up much room!
Two things I've done with them is cut them up and make pillowcases and use them to cover the furniture and floor when I paint.
