We have a dry erase board on the wall by the chest freezer listing the contents along with the date we placed in freezer. When we remove items we erase them, when we add items they go on the board.
your meats need to be in the coldest part of the freezer....cold air sinks. my uncle had a chest freezer...used card board boxes to keep like with like.

How big is it, does it have a shelf and baskets? I have a medium size chest freezer. It has a mid shelf that I assume holds the mechanics of the freezer. and one basket. In the basket I keep things like hamburger, frozen fish food and a couple of smaller items. On the shelf I keep things like bacon, hot dogs, things that are naturally stackable and keep the basket on top of that. I use grocery bags to keep my bags of frozen veggies together. I use a seal a meal type system to freeze my meat in family portions and to keep it flat. and easy to stack in the freezer. It also prevents freezer burn and lasts much longer in the freezer. I keep all the pork together in a bag if the package isn't too big, same with chicken and beef. Things like a rack of ribs, big roasts, ham, etc. will go in open nooks and crannies. I need to know where things are because my fingers do not allow me to do much digging in the frozen meat without a lot of pain, so I am the only one that puts things in and takes it out so I can get done in a hurry. I am lucky that I have two refrigerators , one in the house and one in the garage that was too big to fit in the fridge hole in the kitchen. I keep the more odd shaped things and fries and things like that in those freezers. I keep at least five or more meals of meat in the house freezer and open bags of fries, frozen treats. etc.
the meats need to be in the coldest area of the freezer. Veggies, fruits do ok at the mid point. The items you use most out of the freezer to the top.
