I want to cover 8'popcorn ceilings, but I'm worried about making the ceilings feel lower. Any suggestions...some rooms are narrow and long, others are more open.

I once saw a low ceiling that had been painted a very pale shade of sky blue...very pale. It really opened it up and gave it an appearance of being much higher.
light colors give the appearance if more room
Here's a great article that has a lot of ideas. The one that seems to me to be easy is to use a matte/flat white paint and paint it partway down the wall. See what you think will work in your home.

Paint the ceiling a bright white or a light color. Maybe do a vertical stripe paint accent wall.
Stripe wallpaper - white drop ceiling
You might also try putting a picture rail molding about 10 inches below the ceiling (all around the room) paint every thing above the picture rail in a very light color (we used November Sky, a light grey-ish blue)
I have also seen some of the DIY shows put in a false trey ceiling using molding and then painting the center a slightly darker color to give the illusion of shadows
