I would create a false back.. using painted ply wood. cut long edges at 45 degrees to fit snub and secure with quarter round molding so that stuff doesn't escape back there and hide. Hang one or more levels of wire baskets along the back secure with hooks or screws and clips... put things back there such as extra sponges, oven cleaner, etc... that you don't need access to every day. Also put them along the sides or hang a curtain rod from the "brackets" made for that along the sides to hold spray bottle stuff. Find a shallow tray or a roll out drawer that will fit under your garbage grinder (smaller, flatter stuff can go here) that can pull in and out for every day access.

Stacked pull out bins and/or a large lazy susan.
You didn't say if it was a single or double sink, but there's a couple of ideas:
1. for a single sink where the disposal would be in the center of the triangle use lazy susans on each side. Under disposal install pull out tray for small items.
2. for a double sink, install a pull out tray on the side that does not have the disposal, under disposal use one lazy susan to store small items.
My corner cabinet had built in lazy Susan's on the shelves.
