As someone who has lathe and plaster walls... the best way is to tear it out to studs in that area and then frame it out as you normally would. Patch with drywall and blend with mud then sand and paint. Good luck!
if you have lath and plaster... you might have nob and tube... If YOU do not have the basic knowledge on how to install an electrical box... YOU should be looking for and electrical contractor... bad wiring equals the possibility of a house fire... your safety and the safety of your family is at stake. You would need a box with "ears". Use the back of the box as a template for cutting the opening in the wall. Run your wiring through the opening and attach to the box. The two "ears" need screwed out and down when installing the box in the opening. When you tighten the two screws the ears flip up and grab the back of the wall as you tighten them to secure the box in the opening.

When we rewired our old house, we had to tear out the plaster and lath on most of the walls to rewire.
cut out a squqre with a jig saw or something similar then install box however you do that run wire through wall i dont know
